Brownie Stuffed Chocolate Chip Cookies

I first saw the recipe in my google reader and it can be found here.   OMG!  They are AMAZING and HUGE!  Check out the pictures below:



The pictures don't do these cookies justice... or show how really amazing these are!  

P.S.  Sorry folks... I made a small batch of chocolate chip cookie mix and it only made 6 brownie cookies.  Not enough to share :(  Take my word for it... they are great!

Potato Chips

I know I said I was going to make Brownie Stuffed Chocolate Chip Cookies today... I decided I'll make those next weekend.   I still have 2-3 dozen Nutella cookies in the kitchen!  I decided to post about a fantastic recipe instead.  A couple of weeks ago my friend, Kelli, posted a link for homemade potato chips that she found on the Allrecipes website.  I was instantly intrigued!

Ingredients

  • 1 tablespoon vegetable oil
  • 1 potato, sliced paper thin
  • salt


Directions

  • Pour the vegetable oil into a plastic bag (a produce bag words well).  Add the potato slices and shake to coat.
  • Coat a large dinner plate lightly with oil or cooking spray.  Arrange potato slices in a single layer on the dish.
  • Cook in the microwave for 5-7 minutes or until lightly browned (if not browned, they will not become crisp). NOTE: cooking time varies based on microwave.
  • Sprinkle salt on chips and remove from plate to cool.
  • (You do not need to keep oiling the plate for remainder of potatoes)

Review

These chips are amazing!  I stopped buying bags of chips for lunches and now just make chips.  

The first time I made them was not pretty.... I sliced the tip of my finger! Yowza!  Something I've noticed the success of the chip depends on the potato.  If it isn't fully ripe, the chips are no bueno.

Nutella Cookies!

Welcome to my wonderful world of baking, running, and everything else that makes me happy.  I've been thinking about starting a blog for sometime now... but just never got around to it.  My friend of almost 20 years, Andrea, is the blogging queen (you can find her blog here).  She has encouraged me to join this world of blogging.  


Let's get down to business... my first post is about Nutella Cookies.  I follow a ton of baking blogs and found this recipe on Ryan's Baking Blog.  I LOVE LOVE LOVE Nutella so I knew I had to try this out!  I think I once devoured an entire jar within 24 hours.... my husband had to do an intervention.  If I continued eating this wonderful treat, I would weigh 400 lbs.  I had to cut my love of Nutella out of my life... for awhile, that is until World Nutella Day in early February.  I made Nutella cupcakes for a good friend's birthday and had some of the deliciousness leftover.  That is where the Nutella Cookies came into play.  


I don't typically make cookies.  My specialty (if that's what you want to call it) are cupcakes, but I thought I would change things up a bit.  This recipe was very easy.  I had everything except the mini chocolate chips.  Do you know how addicting these are to just eat out of the bag???  Anyways, the cookies are awesome!!  Take a look below:
